- Cut the mozzarella into thick sticks, about 3 inches long and ½ inch wide.
- Set up a breading station with three bowls: flour, whisked eggs, and breadcrumb mixture.
- Coat each stick in flour, dip in eggs, then press into the breadcrumb mixture.
- For extra crispiness, repeat the egg and breadcrumb coating process.
- Freeze the breaded sticks for 20-25 minutes.
- Heat 2 inches of avocado oil in a deep fryer or heavy pot to 375°F.
- Fry mozzarella sticks in batches for 1-2 minutes until golden brown.
- Make the hot glaze by melting butter and stirring in cayenne, brown sugar, paprika, garlic powder, chili powder, and hot sauce.
- Dip each fried stick in the hot glaze to coat generously.
