Method
 

Preparation
  1. Cut the mozzarella into thick sticks, about 3 inches long and ½ inch wide.
  2. Set up a breading station with three bowls: flour, whisked eggs, and breadcrumb mixture.
  3. Coat each stick in flour, dip in eggs, then press into the breadcrumb mixture.
  4. For extra crispiness, repeat the egg and breadcrumb coating process.
  5. Freeze the breaded sticks for 20-25 minutes.
  6. Heat 2 inches of avocado oil in a deep fryer or heavy pot to 375°F.
  7. Fry mozzarella sticks in batches for 1-2 minutes until golden brown.
  8. Make the hot glaze by melting butter and stirring in cayenne, brown sugar, paprika, garlic powder, chili powder, and hot sauce.
  9. Dip each fried stick in the hot glaze to coat generously.
