- Begin by pitting and chopping the Medjool dates. Place the chopped dates, protein powder, and sunflower seed butter into a food processor. Blend until they form a smooth and sticky mixture.
- Using a tablespoon or cookie scoop, scoop out portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Wet your hands to prevent sticking.
- Melt the dark chocolate in a microwave-safe bowl, stirring every 30 seconds until silky smooth. Dip each bite into the melted chocolate.
- Refrigerate the bites for at least 30 minutes to allow them to set and harden.
- Store the Brownie Protein Bites in an airtight container. They can be kept in the fridge for up to 1 month or frozen for up to 3 months.
