Instructions
  1. Begin by pitting and chopping the Medjool dates. Place the chopped dates, protein powder, and sunflower seed butter into a food processor. Blend until they form a smooth and sticky mixture.
  2. Using a tablespoon or cookie scoop, scoop out portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Wet your hands to prevent sticking.
  3. Melt the dark chocolate in a microwave-safe bowl, stirring every 30 seconds until silky smooth. Dip each bite into the melted chocolate.
  4. Refrigerate the bites for at least 30 minutes to allow them to set and harden.
  5. Store the Brownie Protein Bites in an airtight container. They can be kept in the fridge for up to 1 month or frozen for up to 3 months.
