  • 2 tbsp fresh dill chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
For the Taquitos
  • 12 count 6-inch flour tortillas or corn tortillas for gluten-free
  • 1 tbsp olive oil spray for crisping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine the shredded chicken, dill pickles, cream cheese, ranch dressing, cheddar, mozzarella, dill, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  3. Lay tortillas flat and scoop about 3 tablespoons of the chicken mixture onto the bottom third of each tortilla. Roll tightly from the filled edge.
  4. Place taquitos seam-side down on the baking sheet, spaced apart.
  5. Lightly spray the tops of the taquitos with olive oil.
  6. Bake in the preheated oven for 22-25 minutes until golden brown and crispy.
  7. Allow to cool for a couple of minutes before serving. Optionally serve with ranch dressing or garnish with fresh dill.
