- Preheat your oven to 425°F (218°C) for perfect roasted carrots.
- Peel the rainbow carrots and cut them into uniform sizes, about 1-inch thick.
- Drizzle olive oil over the carrots and sprinkle with smoked paprika and salt. Toss well.
- Roast the carrots in the preheated oven for about 25–30 minutes, stirring halfway through.
- In a mixing bowl, combine ricotta, lemon zest, and a pinch of salt. Whip until creamy and smooth.
- Once the carrots are roasted, remove from oven and drizzle with hot honey.
- Spread whipped ricotta on a serving dish and arrange the roasted carrots on top.
- Finish with more hot honey drizzled on top and serve immediately while warm.
