Step-by-Step Instructions
  1. Preheat your oven to 425°F (218°C) for perfect roasted carrots.
  2. Peel the rainbow carrots and cut them into uniform sizes, about 1-inch thick.
  3. Drizzle olive oil over the carrots and sprinkle with smoked paprika and salt. Toss well.
  4. Roast the carrots in the preheated oven for about 25–30 minutes, stirring halfway through.
  5. In a mixing bowl, combine ricotta, lemon zest, and a pinch of salt. Whip until creamy and smooth.
  6. Once the carrots are roasted, remove from oven and drizzle with hot honey.
  7. Spread whipped ricotta on a serving dish and arrange the roasted carrots on top.
  8. Finish with more hot honey drizzled on top and serve immediately while warm.
