Ingredients
  

For the Steak
  • 1 pound Flank or Sirloin Steak Can be substituted with chicken breast or portobello mushrooms
  • 1 tablespoon Paprika
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Ground Cumin
  • 1 tablespoon Olive Oil Used for cooking the steak
For the Queso
  • 1 cup Whole Milk
  • 2 cups Shredded Cheddar Cheese Swap with Monterey Jack or Mexican blend
  • 2 tablespoons Butter
  • 2 cloves Garlic Minced
  • 1 teaspoon Chili Powder Adjust according to desired heat level
For the Rice
  • 1 cup Long-Grain White Rice Rinse until water runs clear
  • 1 teaspoon Garlic Powder Enhances flavor
  • 2 cups Broth or Water Broth for richer flavor
For Garnishing
  • 1/4 cup Fresh Cilantro Chopped
  • 1 lime Lime Wedges For squeezing over the dish
  • 1 medium Avocado Sliced
  • to taste Sliced Jalapeños Optional

Method
 

Instructions
  1. Pat the steak dry and season with olive oil, paprika, cumin, garlic powder, salt, and pepper. Let it sit for 10 minutes.
  2. Heat a skillet over medium-high heat and sear the steak for 4–5 minutes on each side. Remove and let rest for 5–10 minutes.
  3. Rinse the rice and heat olive oil in a pot. Add rice and garlic powder, stirring for 2 minutes. Add broth or water, bring to boil, cover and simmer for 18–20 minutes.
  4. In the skillet, melt butter and sauté minced garlic for 1 minute. Add milk and bring to a gentle simmer, then stir in cheese until smooth. Season to taste.
  5. Assemble by placing rice on a plate, topping with sliced steak and pouring the queso over it. Garnish with cilantro, lime, avocado, and jalapeños.
