Steps
- Preheat your oven to 350°F (175°C) and prepare an 11×7-inch baking dish by greasing it or lining with parchment paper.
- In a mixing bowl, combine all-purpose flour, powdered sugar, salt, and room-temperature butter. Blend until resembling coarse crumbs and press into the bottom of the baking dish. Bake for 18-20 minutes until golden brown.
- Whisk together granulated sugar and flour in a separate bowl. Gradually add in eggs, grapefruit zest, grapefruit juice, and food coloring, stirring until smooth.
- Pour the filling over the hot crust and return to the oven. Bake for an additional 20 minutes until the filling jiggles slightly in the center.
- Let cool completely in the pan for about an hour at room temperature, then refrigerate for at least 2 hours.
- Slice the chilled bars into squares and garnish with extra grapefruit zest or fresh fruit slices before serving.
