  • 3 large Large Eggs Egg replacer can be used for a vegan version.
  • 1 tablespoon Grapefruit Zest Can replace some with lemon zest for added tang.
  • 1/2 cup Grapefruit Juice Mix with lemon juice to enhance tartness.
  • 1 drop Pink Food Coloring Optional for a vibrant appearance.

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and prepare an 11×7-inch baking dish by greasing it or lining with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, powdered sugar, salt, and room-temperature butter. Blend until resembling coarse crumbs and press into the bottom of the baking dish. Bake for 18-20 minutes until golden brown.
  3. Whisk together granulated sugar and flour in a separate bowl. Gradually add in eggs, grapefruit zest, grapefruit juice, and food coloring, stirring until smooth.
  4. Pour the filling over the hot crust and return to the oven. Bake for an additional 20 minutes until the filling jiggles slightly in the center.
  5. Let cool completely in the pan for about an hour at room temperature, then refrigerate for at least 2 hours.
  6. Slice the chilled bars into squares and garnish with extra grapefruit zest or fresh fruit slices before serving.
