  • 2 tablespoons Cilantro chopped
  • 2 tablespoons Basil chopped, fresh preferred
For the Dressing
  • 1.5 tablespoons Sesame Seeds toasted
  • 3 tablespoons Rice Vinegar
  • 2 tablespoons Sesame Oil or olive oil
  • 3 tablespoons Tamari/Soy Sauce Tamari for gluten-free
  • 2 tablespoons White Miso or tahini
  • 1 teaspoon Sriracha optional for heat
  • 1 tablespoon Coconut Sugar or honey/maple syrup

Method
 

Preparation Steps
  1. Toast sesame seeds in a skillet over medium heat for 5-7 minutes until golden brown.
  2. Wash and peel the rainbow carrots, then julienne them into thin strips.
  3. In a mixing bowl, combine julienned carrots, chopped scallions, cilantro, and basil. Toss to mix.
  4. Blend the dressing ingredients until smooth or whisk them together in a bowl.
  5. Pour the dressing over the salad mixture and toss until evenly coated.
  6. Chill the salad in the refrigerator for at least one hour before serving.
